Pot o' Gold Brownies

Need a dessert for your St. Patrick’s Day festivities? You don’t have to find the end of a rainbow to enjoy these Pots o’ Gold. Repurposing a cake pop baking pan lead to creating these fun bedazzled luck charms. Dark chocolate Ghirardelli brownies topped with creamy peanut butter are sure to get your Irish eyes smiling.


INGREDIENTS
1 Box Ghirardelli Dark Chocolate Brownie Mix
1 Egg
1/4 Cup Water
1/2 Cup Vegetable Oil
1/2 Cup Peanut Butter
Sweet Tooth Fairy® Gold Candy Sequins
1/4 Chocolate Chips or Melting Wafers, melted
6 inch Lollipop Sticks
PAM Baking Spray (with flour)

Cake Pop Pan (Example: Nordic Ware Donut Hole & Cake Pop Pan)

1) Preheat the oven to 325° F. Prepare the Ghirardelli Brownie mix according to the directions, adding the liquid ingredients and mixing well.


2) Spray the PAM non-stick baking spray into the cavities of the cake pop pan. Be certain that it is NOT the side with the air vent hole.


3) Fill the the cake pop pan with enough batter to just touch the top edge. Do not be concerned should the batter flow over the edge a little bit while baking. This overflow batter will appear as the pots rim once baked.


BAKING TIP: Wet a small towel and place it on a heat safe surface. When your brownies are done baking, pull them out of the oven and place the hot pan on the damp towel. The damp towel helps pull the heat from the pan, and makes it easier to take the brownies out!

4) Bake the mixture, without the vented pan on top, in the oven at 325° F for 12-15 minutes, depending on how your oven performs.


5) While the brownies are still warm, take the vented half of the cake pop pan and place it curve down and *gently press it into the cooked brownies. Pressing this part of the pan down will create a little cavity for the peanut butter.

*You want to put just enough pressure to make the indentations, but not push it all the way down and through.


6) Remove the brownies from pan so they can cool completely. Due to the oil content in peanut butter, you must be sure they are completely cool or the filling will be too soft.


7) Once they are completely cooled, use a small spoon to add the peanut butter to the “bowl” of the pots. Be careful not to get it on the edges or it will lose the look of a cast iron pot.


8) Take the filled brownies and place them face down into a small bowl of the gold candy sequin “coins.” The candies will stick to the peanut butter to make a pot filled with gold!


9) Dab the lollipop sticks in the melted chocolate and push them into the bottom of the brownie pots, careful not to push all the way through to the peanut butter. You can place them on their sides until the melted chocolate cools and solidifies to secure the brownie on the stick. A few minutes in the refrigerator helps to harden the chocolate a little faster.


10) Display them in a cake pop stand, and share the luck with your friends and family!
